Email #11: AG Energy Balls (no baking required)

This recipe is easy to make, satisfying and nutritious enough to eat for breakfast. I hope you enjoy them as much as we have over the years!

Ingredients
1 cup old-fashioned oats (gluten free preferable)
½ cup almond butter or sunflower seed butter
½ cup ground flaxseed or flaxseed meal
½  cup semi-sweet chocolate morsels (preferably dairy free)
⅓ cup raw honey (preferably local)
⅓  cup virgin or extra virgin coconut oil
1 heaping tablespoon chia seeds
1 teaspoon vanilla extract (gluten free preferable)

Directions

  1. Line brownie pan (9×9 or 8×8 pan) with parchment paper for easy clean-up
  2. Combine ingredients (oats, nut/seed butter, flax seed meal, chocolate chips, honey, coconut oil, chia seeds, and vanilla extract) in a bowl
  3. Roll dough into balls about 1 inch in diameter (dough will be sticky)
  4. Place energy balls in pan
  5. Put pan in freezer for at least ½ hour
  6. Remove pan from freezer and place energy balls in airtight container
  7. Keep energy ball container in freezer when not being consumed
