Email #4: AG GF Banana Nut Muffins
In the hopes of limiting waste during this time, I figured it was the perfect opportunity to share this simple, satisfying and healthy recipe with you. Enjoy!

Preheat Oven to 350 degrees Fahrenheit
(N.B. Organic, non-GMO, cage free ingredients always recommended)

Ingredients
3 ripe bananas
2 eggs
2 cups gluten free flour (I prefer almond flour)
½ cup unsweetened apple sauce
1 tsp baking soda
½ cup walnuts, chopped
½ cup semi-sweet morsels (optional)

Directions

  1. Lightly coat a muffin tin with olive or coconut oil spray
  2. In a mixing bowl, beat eggs
  3. Add banana and mash into the eggs
  4. Mix in dry ingredients and stir well
  5. Add nuts and optional chocolate chips
  6. Gently stir 
  7. Pour batter into muffin tin
  8. Bake for 20min
  9. Let sit at least 10min
  10. Enjoy!
